Why it works
It is a controlled test. Holding the copy constant across every size turns the book into a comparison instrument, so the buyer reads the difference between faces instead of the difference between words. Setting display sizes rotated on the page is a deliberate scale decision - it buys the biggest possible showing on a small sheet, and the awkwardness of turning the book is itself a demonstration of how large the type is. The repeated imprint on every single page means any leaf torn out still sells the foundry, and putting real prices at the back removes the last step between wanting the type and ordering it.
