Why it works
The signature is the argument. Because dozens of firms in Cologne legitimately carried the Farina name, the sign puts the proprietor's own hand at the optical centre and lets the flourish, which is expensive to imitate on stone, act as the identifying mark while the typeset name only labels the category.
